Fish parcels

    hake fillets
  • salt and freshly ground black pepper, to taste
  • 25
    lemon juice
  • 2
    tomatoes, sliced
  • 10
    fresh button mushrooms, sliced
  • 1
    red pepper, cut into strips
  • 4
    courgettes, sliced
  • 1
    wheel feta
  • 2
    cloves garlic, crushed


Preheat oven to 180 °C.
Divide fish into four portions.
Place each portion on a large piece of foil.
Season with salt, pepper and lemon juice.
Top with the garlic and vegetables and lastly, crumble over the feta.
Close each parcel tightly with a little space above the top of the fish - so the cheese doesn't stick to it.
Place on a baking tray and bake in preheated oven for 20 minutes.
Serve with brown rice or a baked potato.
