Croissant French toast

Ingredients (10)

6 eggs
60 ml milk
3 Tbs fresh chives — chopped
salt and freshly ground black pepper — to taste
5 ml butter
15 ml oil
4 bread — croissants
Dijon mustard
4 - 8 ham — Gypsy, sliced
4 - 8 emmental cheese — slices

Method:

Beat the eggs, milk and chives together and season. Add the butter and oil to the pan and heat until bubbling.

Dip 2 pieces of croissant in the egg mixture (allow them to absorb lots of egg) and fry over moderate heat until golden on each side (about 30 seconds a side). Remove and place on paper towel and fry the rest. Keep the others warm by placing in a warmer drawer or a low oven.

Spread the fried croissants with a bit of mustard and sandwich a slice or two of ham and cheese between 2 pieces of croissants. Top with some rocket.
