Crispy potatoes

    large potatoes - peeled and diced into 3cm cubes
  • Olive oil
  • Freshly ground salt and pepper
  • 2
    kassler/gammon steaks - cut into 3 cm cubes
  • 2-4
    free range eggs
  • Chives


Preheat the oven to 200 C.

Toss the potatoes with olive oil until well coated, season and place into a well greased baking tray.

Roast for +- 25-30 minutes.

When the potatoes are almost ready, fry the kassler cubes in a little olive oil until caramelised, remove and fry the eggs in the same pan.

Quickly combine the kassler cubes with the roasted potatoes and spoon into a serving dish. Top with gooey fried eggs and sprinkle with chives.


Try replacing kassler with chopped bacon or smoked chicken rashers.

Fry some baby rosa tomatoes with the kassler.

Toss with some rocket.

Add some fresh herbs to the mix.
