Chicken, fennel and orange pasta salad

Ingredients

    tagliatelle
  • 15
    ml
    olive oil
  • 300
    g
    chicken or turkey breast, cut into strips
  • 1
    fennel bulb, thinly sliced
  • 1
    orange, peeled and roughly chopped
  • a splash of orange juice
  • 15
    ml
    pine nuts, toasted
  • 30
    ml
    fresh dill, roughly chopped
 

Method

Cook the pasta according to the packet instructions.

Meanwhile, heat the oil in a frying pan and sauté the chicken for five minutes.

Add the fennel and cook until tender.

Drain the pasta, add the cooked chicken, fennel, orange pieces and juice.

Season with salt and freshly ground black pepper.

Sprinkle the pine nuts and dill over the pasta and serve immediately.
