Chicken, butternut and chorizo casserole

Ingredients (13)

1 pnp finest extra-virgin olive oil — glug
4 chorizo sausage — sliced
1 salt and freshly ground black pepper
10 chicken — pieces
1 flour — self-raising
12 baby onions — peeled
6 garlic — cloves, chopped
1 Tbs pnp ground coriander
2 green pepper — sliced
2 tinned tomatoes — chopped
125 ml wine — dry white
2 Tbs sugar — syrup
1 butternut

Method:

Preheat oven to 160°C.

Heat oil and fry chorizo for a few minutes.

Remove, set aside.

Season chicken and toss in flour.

Brown in pan. Remove, set aside.

Add onions and garlic and fry for a minute.

Place all ingredients in an ovenproof dish and season well.

Cook uncovered for 30 minutes.

Add pumpkin and cook for a further 30 minutes.

Adjust seasoning and serve with rice or mashed potatoes.
