Cheesy chicken and sweet potato casserole

    sweet potatoes, peeled and thinly sliced
  • 250
    g
    frozen creamed spinach - thawed and thoroughly drained
  • 50
    g
    cheddar cheese - grated
  • 3
    ml
    ground nutmeg
  • Salt and freshly ground black pepper
  • 600

    chicken breast fillets
  • 125
    ml
    milk
  • 40
    g
    seasoned breadcrumbs
  • 250
    ml
    sour cream or plain yogurt
  • 50
    g
    cheddar cheese - grated
 

Method

Preheat oven to 190ºC.

Layer sweet potatoes in a greased heat-resistant casserole dish. Spread spinach over sweet potatoes, sprinkle with cheese, nutmeg and seasoning.


Season chicken breasts with salt and pepper then dip in sour cream (or yoghurt), and then in breadcrumbs. Arrange on top of spinach.

Mix leftover milk and sour cream and pour over chicken.

Cover and bake in the oven for 30 -40 minutes until the breasts are cooked through.

Remove from the oven and sprinkle with more cheddar cheese, place under grill to brown and bubble.

Serve warm.
