Cajun-crumbed fish burgers

With mayo, tomato and fresh rocket.

Ingredients

 
  • 4
    frozen hake fillets, defrosted
  • 50
    ml
    flour
  • 2 to 5ml Cajun spice
  • 1
    egg, lightly beaten
  • about 350ml ciabatta breadcrumbs
  • 45
    ml
    each butter and sunflower oil
  • 4
    bread rolls, or 1 long baguette cut into 4
  • 50
    ml
    mayonnaise
  • rocket, tomato slices, lemon wedges and chips, to serve

Method

 
Pat the fillets dry with paper towels. Mix the Cajun spice into the flour thoroughly. Coat the fish in the flour mixture, then coat it in egg and then in breadcrumbs.

Heat the butter and oil in a frying pan over medium heat. Fry the fish until cooked through and the crumbs are golden brown.

Cut the rolls open and spread with mayonnaise. Top with a fish fillet, some rocket and tomato slices.
