Baked fish with roasted fennel

Ingredients

  • 2
    bulbs fennel
  • 2
    cloves garlic
  • half lemon, zest and juice
  • half orange, zest and juice
  • 1
    Tbs
    butter
  • 1
    Tbs
    olive oil
  • sea salt and black pepper

Preheat the oven to 200ºC.

Split each fennel bulb in half and chop the stems into 2cm lengths (reserve the fronds to arrange over the cooked fish). Peel and slice the garlic cloves.

Place the fennel and garlic in a baking dish and top with the citrus juice and zest. Top with butter and oil. Bake for 20 minutes or until cooked through. Serve with baked fish.
