Ingredients (6)

250.00 g spinach — cooked, drained
30.00 ml parmesan cheese — freshly grated
12.00 eggs — large
60.00 ml cream
100.00 ml feta cheese — crumbled
0.00 sea salt and freshly ground black pepper

Method:

Set oven at 200°C.

Grease six ramekins with butter and then divide the spinach between them.

Sprinkle with Parmesan cheese. Break two eggs into each ramekin and cover with cream.

Top with feta. Season with salt and freshly ground black pepper.

Place ramekins onto a baking sheet and bake in preheated oven for 10 minutes or until puffed and golden brown.

Serve with wholewheat bread or toast.
