Bacon, chickpea and leek soup

Ingredients

  • 1
    tin of chickpeas
  • a few hanfuls
    bacon bits
  • 6
    leek stalks
  • 1
    cup
    vegetable/chicken stock
  • chilli flakes to your taste
  • 1+
    cup
    hot water
 

Method

Fry the bacon and once cooked add in the sliced leeks.

Fry leeks in the fat from the bacon until soft.

Add in chickpeas, chillies, stock and some water.

Season to taste (be careful; the bacon and stock are salty). Let it simmer for a while with the lid on.
