Mushroom and bacon mini quiches

mushroom bacon quiche

Ingredients

  • 250
    ml
    milk
  • 250
    g
    bacon pieces- cooked
  • 1 onion - chopped
  • 500
    ml
    grated cheddar cheese
  • 250
    g
    mushrooms - chopped
  • 50
    g
    butter
  • 5
    ml
    baking powder
  • seasoning to taste
  • ml
    finely chopped parsley or spring onions
  • 2 eggs
 

Method

Sauté the bacon, onions and mushrooms in the butter.

Beat together milk, eggs and seasoning. Add to bacon the mixture. Add remaining ingredients and mix well.

Pour into non-stick patty pans and bake at 180°C for about 15 - 20 minutes or until cooked through.

Serve with a side of roasted veggies and some fresh crusty bread.
