Avocado and sweet chilli noodle salad

    avocados- halved and sliced
  • 200

    veggies: mange tout, baby corn, broccoli spears, carrot batons, bean sprouts
  • 2
    chicken breasts- cooked
  • 200
    egg noodles- cooked
  • Dressing:
  • 1/2
    cup
    sweet chilli sauce
  • 1/4
    cup
    lemon juice
  • 2
    Tbs
    fish sauce
  • 2
    Tbs
    castor sugar
  • 2
    Tbs
    sesame oil
 

Method

Mix all the dressing ingredients together well. Toss the salad ingredients together in a large bowl with the dressing until well coated.

Serve in bowls garnished with seeds and sprouts
