3-minute microwave pesto fish

Ingredients

  • 200
    g
    filleted white fish (hake/gurnard/silver fish)
  • 1
    Tbs
    red pesto
  • 6
    cherry tomatoes (halved)
  • 50
    g
    mini asparagus spears/sliced courgettes
  • 1
    knob butter
 

Method

Lay a large piece of baking paper onto a plate.

Place the veg in the centre and top with fish, pesto, butter and tomatoes.

Season with salt and pepper.

Fold over the edges of the paper to form a sealed rectangle.

Steam in the microwave on full power for 2 ½ – 3 minutes. (I used a 1000W microwave oven - be careful when opening the parcels and they will be filled with hot steam.)
