Creamy chocolate meringue tart

    dark chocolate (broken)
  • 45
    ml
    cold black coffee
  • 250
    ml
    cream (chilled)
  • 5
    ml
    vanilla essence
  • 125
    g
    peppermint chocolate
  • coarsely chopped
  • 1
    readymade meringue shell
  • 1
    flake chocolate bar (crumbled)

1. Melt the dark chocolate squares over boiling water. Add the cold coffee a spoonful at a time, mixing well after each addition. Leave the mixture to cool.

2. Whisk the cream until stiff and add the vanilla essence and peppermint chocolate, if using. Spoon into the meringue shell.

3. Spoon the melted coffee chocolate over and sprinkle on the crumbled Flake.
