Masala chicken drumsticks with carrot salad

Ingredients (12)

8 chicken drumsticks — drumsticks
salt
10 ml cumin seeds — toasted
125 ml full cream yoghurt — plain
4 garlic cloves — crushed
30 ml masala — roasted
8 carrots — peeled, grated
20 g fresh coriander — roughly chopped, plus extra to garnish
15 ml apple cider vinegar
pinch salt
60 ml raisins
lemon wedges — to garnish

Method:

Preheat the oven to 210°C. Put a wire rack on a baking sheet and grease with non-stick spray.

For the chicken

Put the chicken pieces in a dish and season with salt. Mix the rest of the ingredients well and rub over the chicken pieces.

Put the drumsticks in a single layer on the prepared wire rack and roast for 25 minutes or until done.

For the salad

In the meantime, mix all the salad ingredients and serve with the drumsticks.

To finish

Garnish with lemon quarters and coriander.
