Decadent white chocolate truffles

I would sometimes treat myself to a truffle or two after a long dinner service. Nowadays I prefer white chocolate.

Ingredients (6)

400 g white chocolate — chopped
50 g butter
125 ml cream
100 g dark chocolate — chopped
30 ml Maldon salt
5 ml dried chilli flakes

Method:

Combine the white chocolate, butter and cream in a heatproof bowl.

Place the bowl over a saucepan of simmering water and stir the mixture until the chocolate is completely melted and smooth.

Refrigerate until set.

When set, roll teaspoonfuls of the mixture into balls and place them on a baking tray.

Refrigerate once more until set.

When the truffles are ready, melt the dark chocolate in a bowl set over a saucepan of simmering water.

Dip the set truffles into the dark chocolate, place them back on the baking tray and sprinkle some with a pinch of sea salt and others with a few chilli flakes. Leave to set completely in the fridge before serving.
