Rocket, bacon and tomato on French toast

    Slices streaky bacon
  • 4
    large eggs, lightly beaten
  • 190
    ml
    thick cream
  • 65
    ml
    chopped fresh chives
  • 45
    ml
    unsalted butter
  • salt and freshly grounded pepper
  • 4
    slices crusty bread, cut 10cm thick
  • 8
    slices tomato
 

Method

Preheat the oven to 180°C. Place bacon on a rimmed baking sheet, lined with foil.


Cook for about 15 minutes or until golden and crisp, rotating sheet halfway through.


Drain on paper towels. Meanwhile, in a large shallow dish, whisk together eggs, cream and chives. Season with salt and pepper.


Arrange bread in a single layer in egg mixture and soak 3 minutes on each side.


In a large non-stick frying pan, melt butter over medium heat. When the butter sizzles, add bread and cook for about 3 minutes per side, flipping once, or until golden and crisp around edges.

To serve, arrange layers of rocket, tomato and bacon on each slice of French toast. Serve immediately with eggs of your liking.
