Ingredients (7)

1 kg flour — bread
10 g Superbake Instant Yeast
eggs
1 kg flour
5 ml salt
175 g butter — softened
egg — beaten

Method:

Preheat the oven to 200 °C.

1 Dust a baking sheet with flour. Tip all the ingredients, into a bowl. Knead the dough on a lightly-floured surface until elastic. Put in a covered bowl for about 40 minutes or until it doubles in size.

2 Punch the dough down and divide it into 12 equal portions. Roll three of them into oval shapes, covering the remaining dough with a clean tea towel. Dust the tops lightly with flour and put them on the baking sheet.

3 Pop into the oven, on a high shelf, and bake for 8 minutes or until they become golden and puffy.

4 Meanwhile, prepare the other portions. When the first batch is ready, remove from the oven and wrap them in another tea towel. Continue cooking and wrapping the rest of the pittas.
