Pork-chop hero roll

Ingredients

    pork chops, defrosted
  • 40
    ml
    butter, plus extra to spread
  • 3
    medium-sized onions, sliced
  • handful of sage leaves (optional)
  • 10

    brown sugar
  • 4
    ciabatta rolls, cut open
  • 2
    ripe tomatoes, sliced
  • 1
    packet rocket
  • oven-baked chips, to serve
  • MARINADE:
  • 2
    cloves
    garlic, crushed
  • 30
    ml
    each Worcestershire sauce, olive oil, white wine vinegar
  • 15
    ml
    tomato pureé
  • 30
    ml
    each soy sauce and honey
 

Method

Mix the marinade ingredients together and pour over the chops. Leave to marinate for 30 minutes, or longer.

Heat the butter in a saucepan and cook the onions, sage and sugar slowly for about 30 minutes until soft and sweet.

Remove the chops from the marinade and pat dry then brush with oil. Braai or cook on a griddle pan until cooked through. Leave to stand for approximately five minutes, then cut the meat off the bone and slice thinly. Simmer the remaining marinade to reduce it until thickened.

Toast the ciabatta rolls, spread with butter and then top with onions, tomato, rocket and the sliced meat. Drizzle with the reduced marinade. Serve with oven-baked chips.
