Refreshing litchi and lemon grass cocktails

  • 1
    cup
    fresh litchis, peeled and pitted
  • 1
    cup
    grapefruit juice
  • 2
    shots of lemon grass-infused vodka
  • 1
    cup
    crushed ice
  • TO SERVE:
  • Trimmed lemon grass stalks
 

Method

 

Infuse the vodka with the lemon grass for at least two weeks before making the cocktails so the flavour really comes through.

Blitz the litchis in a food processor.

Then blitz the litchis, grapefruit juice, vodka and ice together in a blender or food processor until frothy and combined.

Divide between 4 martini glasses. Garnish each glass with a stalk of lemon grass if you like. Serve with prawn chips on the side (cooked according to packet instructions).

Cook’s Note

To make lemon grass-infused vodka, remove the tough outer layer from 3-4 stalks of lemon grass, split them in half and add to a bottle of vodka. (You may have to pour a shot or two to make space for the lemon grass.)

Make the cocktail with litchi juice instead of fresh litchis and plop a whole peeled litchi in each glass.
