Infuse the vodka with the lemon grass for at least two weeks before making the cocktails so the flavour really comes through.Blitz the litchis in a food processor.Then blitz the litchis, grapefruit juice, vodka and ice together in a blender or food processor until frothy and combined.Divide between 4 martini glasses. Garnish each glass with a stalk of lemon grass if you like. Serve with prawn chips on the side (cooked according to packet instructions).Cook’s NoteTo make lemon grass-infused vodka, remove the tough outer layer from 3-4 stalks of lemon grass, split them in half and add to a bottle of vodka.
