Tomato Sauce
Ingredients
1
onion, chopped
oil for frying
1 kg
ripe tomatoes, skinned and chopped
2
cloves garlic, crushed
15 ml
fresh basil
1
bay leaf
10 ml
sugar
30 ml
tomato paste
salt and black pepper
Method:
Sauté onion in oil, add tomatoes, crushed garlic, fresh basil (or use 5 ml dried), bay leaf, sugar, tomato paste, salt and black pepper and simmer for about 45 minutes, or until sauce is thick. Remove bay leaf. Makes about 600 ml and can be kept in the fridge for two weeks, or frozen.
