Kingklip and pineapple kebabs with cucumber and basil couscous

Ingredients
4
fresh Kingklip fillets
1
pineapple peeled and cubed
4 Tbs
extra virgin olive oil
8
skewers, soak in water before using
Method:
Preheat the oven to 160° C. Cut you fillets into 4cm squares and cut your pineapples evenly in size. Thread a piece of fish onto the skewer and follow it with a piece of pineapple repeating this sequence until the skewer is full. Place the kebabs on a baking tray and drizzle with olive oil. Bake the kebabs for approximately 15 mins. Remove and serve!
