Pineapple chicken

Ingredients
40 ml
sunflower oil
2
cloves garlic, chopped
6
chicken-breast fillets, cut into cubes
1
onion, chopped
200 g
fresh pineapple, peeled and cubed
60 ml
light soya sauce
5 ml
sugar
15 ml
freshly grated ginger
Method:
1. Heat the sunflower oil in a large,
heavy-based frying pan or wok before adding the garlic and frying for 30
seconds. Then add the chicken and stirfry
it over a high heat for one minute.
2. Add all the remaining ingredients
along with 60ml water. Stir-fry for three to four minutes until everything is cooked through. Season with salt and
freshly ground black pepper, and serve
hot with rice.
