Mango, bacon and ricotta salad with fig and balsamic dressing

Ingredients
500 ml
balsamic vinegar
2
dried figs, soaked in water
8 rashers
bacon
4
mangoes, peeled
4 large handfuls
rocket leaves, washed and patted dried
125 ml
ricotta cheese
60 ml
olive oil to taste
5 ml
sea salt and freshly ground black pepper to taste
Method:
Reduce the balsamic vinegar by ¾ by
simmering over low heat. Drain the figs and
purée with the vinegar in a food processor
until smooth.
Fry the bacon until crisp. Slice the mangoes into thin slices. Arrange the rocket leaves on four plates and arrange the fried bacon, mango slices and ricotta cheese on top.
Drizzle with the vinegar
dressing and olive oil and sprinkle with
salt and pepper.
