Pasta With Oven-Roasted Vegetables

Ingredients
1 large butternut, peeled, seeded and cut into 2,5 cm cubes
2 large red onions, cut into wedges
30 ml olive oil
5 ml freshly ground black pepper
350 g gnocchi or rotini (pasta wheels)
50 g pine nuts, toasted
50 g wild rocket
30 ml balsamic vinegar for sprinkling

Method:
Preheat the oven to 200°C. Place the butternut and onions in a large roasting pan and drizzle with the olive oil and season with black pepper.

Roast for 40 -45 minutes or until the vegetables are soft and slightly caramelised. Meanwhile cook the pasta according to the packet instructions, drain and return to the saucepan.

Add the roast vegetables, pine nuts and rocket along with 30 ml water. Heat rapidly until just warm. Mix and season with salt and black pepper. Serve the pasta on warmed plates and sprinkle with balsamic vinegar.
