Fried Omelette With Caramelised Soya Mushrooms

Ingredients
250 ml
sunflower oil
8
free-range eggs, beaten
5 ml
salt and white pepper, to taste
200 g
mushrooms, sliced
125 ml
soya sauce
2 tbsp
sugar
1
red chilli, sliced finely, to serve
2
spring onions, sliced finely, to serve
Method:
Heat the oil in a frying pan. Season the egg mixture and
pour a ¼ of it into the pan.
Cook until the omelette is just firm and the edges are golden brown and crisp. Make the other 3 omelettes and keep hot.
Heat a little sesame oil in a wok, add the mushrooms and stir-fry until brown.
Remove the mushrooms. Pour the soya sauce into the wok and add the sugar. Simmer for 5 minutes until slightly reduced and syrupy. Return the mushrooms to the wok.
Serve
omelettes with mushrooms and fresh chilli and spring onion.
