Salmon salad
Ingredients
250 ml
watercress
500 ml
rocket
250 g
smoked salmon pieces
200 g
feta cheese chunks
60 ml
white balsamic vinegar
4
fresh thyme
90 ml
olive oil
Method:
Arrange the salad leaves on a plate or platter, and top with salmon and feta chunks. Add any other ingredients you like.
In a saucepan, simmer balsamic vinegar and thyme on a low heat until reduced by half. Leave to cool, then whisk in the olive oil.
Drizzle over the salad and serve with fresh bread.
