Caramelised onion, potato and feta bake
Preparation time: 20 minutes
Cooking time: 25 minutes
Ingredients
30 ml
oil
2
red onions, sliced
3
large potatoes
100 g
feta cheese, crumbled
15 ml
fresh chopped rosemary, or
5 ml
dried rosemary
2
large eggs
125 ml
evaporated milk
Method:
Heat oil in a large frying pan and sauté onions until golden brown.
Boil potatoes until just tender, and peel and slice them.
Arrange the potatoes and onions in a greased rectangular baking dish.
Whisk remaining ingredients and pour over the potatoes.
Bake for 20 minutes at 160 °C or until golden and cooked through.
Variation
Add 250 g crispy bacon pieces or 100 g chopped salami, or replace the feta with your favourite cheese.
Serve this potato dish with a fresh salad or seasonal veggies. Rosemary brings out the flavours of the caramelised red onion and feta cheese.
