Baked orange couscous with chicken
Preparation time: 10 minutes
Cooking time: 25 minutes
Ingredients
10 ml
canola oil
4
chicken breast fillets
800 g
couscous
625 ml
chicken stock
625 ml
orange juice
30 ml
olive oil
salt and ground black pepper
2
ripe tomatoes, quartered
10 ml
lemon peel, grated
250 ml
Italian parsley, chopped
100 g
cashew nuts
Method:
Preheat the oven to 200 °C.
Heat the oil in a non-stick pan and cook the chicken on each side for one minute.
Place the couscous in a large baking dish and pour over the stock, orange juice and oil. Season to taste
Place the chicken on top with the tomato quarters, and sprinkle with the lemon peel, parsley and nuts.
Cover with a lid or foil and bake for 20 minutes.
Fluff up the couscous with a fork and serve with a green salad and lemon wedges.
