Steak with sweet potato and banana mash
Preparation time: 15 minutes
Cooking time: 40 minutes
Ingredients
15 ml
oil
700 g
rump steak, cut into strips
250 ml
red wine
1
onion, chopped
500 g
butternut, diced
500 g
sweet potato, cubed
2
bananas, peeled and roasted
100 ml
creme fraiche
Method:
Heat oil in a pan and brown the meat.
Place in a casserole dish with wine and onion.
Cook in a preheated 190 °C oven for about 35 minutes, or until tender.
Place the butternut and sweet potato in a roasting tin and toast for about 25 minutes until soft.
Place the butternut and sweet potato in a bowl with the banana and mash with a potato masher.
Add enough creme fraiche to get the desired consistency.
Serve with the steak.
