Fish steaks with tomatoes and mushrooms
Preparation time: 5 minutes
Cooking time: 25 minutes
Ingredients
15 ml
oil
2
kingklip steaks
4
spring onions, finely chopped
0.50
yellow pepper, chopped
1
large tomato, deseeded and coarsely chopped
150 g
mushrooms, sliced about 5 mm thick
65 ml
dry white wine
15 ml
parsley, chopped
salt and freshly ground black pepper to taste
Method:
Heat oil in a frying pan over a moderate heat for 1 minute.
Pat fish dry with paper towelling, sprinkle with salt and freshly ground black pepper, then add to pan and brown lightly for about 2 1/2 minutes on each side.
Transfer to a plate and keep warm.
Sauté spring onions in the pan drippings for 2 minutes, or until limp.
Add yellow pepper, tomatoes, mushrooms, wine, parsley, salt and pepper, and allow to simmer for 15 minutes.
Spoon sauce onto a warmed plate and top with fish. Serve with rice.
