Pork with stir-fried vegetables
Preparation time: 10 minutes
Cooking time: 30 minutes
Ingredients
50 ml
soya sauce
15 ml
ginger, freshly grated
3
cloves garlic, crushed
30 ml
honey
50 ml
peanut oil
30 ml
dry sherry
2
medium chillies, finely chopped
700 g
pork fillet
30 ml
oil for frying
toasted sesame seeds to garnish
Method:
Place the soya sauce, ginger, garlic, honey, peanut oil, sherry and chillies in a large shallow dish and mix well.
Add the pork fillet and coat well, cover and refrigerate for at least 30 minutes.
Remove pork from marinade, heat oil in a large frying pan and brown pork.
Place in an ovenproof dish, drizzle with remaining marinade, cover and roast in a preheated 180 °C oven for about 15 minutes until cooked through.
Meanwhile, prepare the vegetables.
Slice the pork and serve on a bed of stir-fried vegetables, sprinkled with toasted sesame seeds.
