How to make the best guacamole
This rustic guacamole is creamy and spicy with a lovely chunky texture.
I make the gaucamole by simply smashing about three avos, adding chopped coriander (cilantro), finely sliced spring onions, chopped pickled jalapeno chillies and adding salt and lime juice.
Taste as you go and mix it up to your own taste (see a more exact recipe below).
I like it green and rather chunky which gives the gaucamole texture and bite.

3 ripe avocados
1 handful washed coriander
9-12 spring onions (approx. 3 per avo)
2 jalapeno chillies
Juice of 1 lime
Chop the coriander and spring onions and jalapenos. Mash it all together with a fork in a bowl with the skinned and pipped avocados.
Season with the salt and the lime juice to your tastes.
Add more jalapenos if you like things a little more spicy.
Serve with wedges of lime and something really cold and delicious to drink... I think a Mojito would be fabulous!
