I find myself feeling more and more enthusiastic about giving up meat. I did it for a few months a while ago and felt so good both physically and mentally, but slowly got back into eating meat again.
After seeing another shocking PETA video (video titled 'Your chicken dinner in reverse' warning! shocking imagery) last night I woke up feeling determined this morning to try give it up, at least for while, or at least stick to a no-meat-during-the-week-regime.
Moderation is key if you are a consumer of meat. Just giving it up for one day a week can help our planet, so here are some vegetarian recipes that make cutting out meat a total breeze.
Also remember to try #GreenMonday.
1. Pumpkin ravioli with shaved fennel and burnt sage butter
Hein shares an all-time favourite combination, burnt sage butter ravioli.
2. Veggie dosa/pancakes
These are also wheat free and contain tumeric, the wonderfully functional spice.
3. Spiced cauliflower salad
Cauliflower is still doing its rounds for all the 'carb-avoiders', because it is so versatile and cheap. Add some avo and pine nuts and you simply cannot go wrong with this salad.
4. Potato and pea curry
a.k.a Aloo Mutter is a traditional vegetarian Punjabi dish.
5. Crispy basmati rice balls with tomato and herb sauce
Try these for a nice filling snack.
6. Lentil and mushroom moussaka
This one is a traditional Greek dish with healthy, fibre-rich lentils.
7. Baby marrow noodles with avocado pesto
This recipe is low-carb and high in good fat from the avo, so a healthy dish all round. See the tip to make it vegan.
8. Roasted butternut and cauliflower tagliatelle with herbed creme fraiche
A super simple meal to prepare.
10. Mushroom and tomato mini pizzas
9. Aloo Gobi
A really flavourful traditional Indian dish.
This one's for the kiddies!
