Our editor, Tessa Purdon had the chance to bake some deliciously healthy brownies with Liezel van der Westhuizen in her Cape Town home.
We filmed it for you to watch and below is the recipe so you can try them at home!
1/4 Cup melted coconut oil
100g dark chocolate
2 Tbs honey
400g tin black beans or red kidney beans
1 tsp baking powder
1 cup fresh or frozen berries
Preheat oven to 180 'C and grease a small rectangular baking tray.Combine the coconut oil, chocolate and honey in a saucepan on the stove-top on low heat until melted and smooth.
Blend the beans in a food processor until smooth. Add the eggs and baking powder and blend again.
Combine the chocolate and bean mixtures together and pour the batter into the prepared baking tray.
up the berries into quarters and sprinkle over the top. Bake for 20
mins until cooked through. Allow to cool before cutting into squares.
