Surely there is never a bad time to eat pizza? There is the "morning-after" pizza moment when you greedily swipe the last cold slice from the box. And then there is the first bite from a true thin-crust Italian pizza with a few choice toppings. And off course many moments in between with mates or kids or on the couch when only a pizza will do!

I love slathering some caramelised onions on a base and topping it with slices of Tallegio or Gruyere cheese and roasted butternut. I'm also a sucker for something fresh like ripe fresh tomato or rocket on my pizza.

Use ready-made pizza bases and a bottled sauce for speed or make your own dough and pizza sauce for something special.
