1. Spaghetti with speedy chicken meatballs

This is a funky little number, it supports a quest to eat less red meat. It's lighter and healthier but still delivers on the flavour and comfort food elements, without breaking the bank.

2. Bacon and egg gnocchi

I call this my 'kind-of Carbonara'. It's a fail-proof and fuss-free meal that is exquisite in its simplicity.
What's not to love about big bang for your bucks in the form of crispy bacon bits and plump gnocchi wrapped in silky cream? Then topped with a halo of softly boiled egg and a scattering of Parmesan?

3. Chicken cottage pie  - This cottage pie is healthier by using sweet potato and chicken mince.

- Sweet potato is lower in GI than regular potato, and adds a delicious but mild sweetness to the overall meal.
- Using chicken mince is healthier too. Make this ahead of time and freeze or refrigerate and then just pop in a pre-heated 180C oven about 15 minutes before you'd like to eat.
- To make your mixture go a little further, add in extra vegetables such as grated courgettes or carrots, or even a can of baked beans.
