3 things to do with… roti
I just love a proper hot roti, straight from the tandoor, all fluffy and stretchy with crunchy bits. In my next life there will be a furnace in my kitchen with a roti genie hovering nearby to satisfy my cravings on a whim.
Until then the frozen supermarket variety is a kitchen stand-by. They are a deliciously convenient vehicle for packed lunches, and you don’t have to stick to curry for the filling either. I’ve wrapped anything from shredded leftover 7-hour lamb roast, lettuce and tzatziki to Mexican mince in mine.
If you have time and are in the mood for a proper curry, then this Malaysian Beef Rendang is a guaranteed winner. And while you are at it, you might as well make your own roti’s from scratch with this tried-and-tested hot-water roti recipe from a Bo-Kaap kitchen.
Here are 3 quick roti fixes.
1. Cheesy roti sandwich
Perfect lunchbox and hangover fodder. Add a smear of onion marmalade or some pickles.
All you need is a jar of curry-paste, chicken breasts and 10
minutes. Perfect meal for singles.
3. Mince and butternut roti
Quick mince and butternut curry. Add raw baby spinach,
coriander and feta to the wrap for a summery feel.
