PASTRY
100.00 g butter
315.00 ml flour — self-raising
5.00 ml cinnamon — ground
mixed spice
30.00 ml brown sugar
1.00 eggs — yolk only
water — iced
50.00 g hazelnuts — halved
5.00 apples — small
1.00 lemon — zest and juice
200.00 ml white sugar
200.00 ml water
80.00 ml butter

Method:

Cut the butter into small pieces. Sift the flour and spices together and add the sugar. Rub the butter in well and add the egg yolk and a littled iced water if necessary. Mix lightly to form a smooth dough and roll into a ball. Chill until needed. Heat a cast-iron pan and toast the nuts. until golden brown (without any oil in the pan). Remove from heat and set the nuts aside, Peel and core the apples and cut into wedges. Sprinkle with lemon juice to prevent the apple discolouring. Preheat the oven to
180 ºC. Heat the sugar and water over low heat in a deep pan or saucepan until the sugar dissolves. Stir occasionally to ensure all the sugar crystals have dissolved before the syrup starts boiling. Bring to the boil and boil without stirring until the syrup starts discolouring. Add the butter and boil until the syrup is a light caramel colour. Turn down the heat to very low, add the nuts and apples and sprinkle with the lemon rind. Simmer slowly for about 8 minutes until the apples soften and the syrup thickens slightly. Remove pan from heat and cool slightly. Spoon the apples into a 23 cm cake tin (not a loose-bottomed tin). Remove the pastry from the fridge a while before it’s required. Roll it out slightly bigger than the cake tin and cover the apples with it. Press the pastry down along the edge of the tin and bake for 20 minutes or until the crust is done and golden brown. Allow to cool in the tin for a few minutes. Place a plate over the pan and quickly invert the plate and cake. Be careful – the sauce is very hot. Rearrange the apples if they’ve shifted and serve lukewarm with vanilla ice cream or cream.
