Goats cheese crostini with fig sauce

Ingredients (8)

2 goat's milk cheese — roll
1 bread — small French loaf
olive oil
20 ml fresh chillies — 573
1 figs — fresh
2 Tbs honey
125 ml wine — white
1 sprig fresh thyme

Method:

Cut the French loaf into 1cm rounds and place on a baking tray.
Brush with olive oil and place in a preheated oven at 160 C for about 10 mins to crisp.
Take care not to let them go too brown as you will be reheating them.
Cut the goats cheese and place on top of the crostini and set aside until almost ready to go.
Cut the fresh figs into small wedges and place in a pan on medium heat, add a dash of olive oil to coat.
Pan-fry them for a little while and then add the honey. When they are starting to get nice and hot, add the wine.
let the alcohol burn off and by that time the sauce will be thick.
Place the crostinis in the oven to bake the goats cheese (about 5-7 mins) and then serve warm.
You can put the fig sauce on top of each crostini or serve it on the side.
