Bolinhos de bacalhau – cod and potato dish

Ingredients (10)

300 g cod — dried, soaked
250 g potatoes — boiled, mashed
1 lemon — large, zest only
1 onion — finely chopped
2 cloves garlic — cloves, peeled and grated
2 Tbs fresh parsley — finely chopped
1/2 tsp cayenne pepper
1/2 tsp nutmeg — whole, freshly grated
4 eggs
sea salt and freshly ground black pepper

Method:

Mix all ingredients together in a large bowl, breaking in the eggs and combining them with the ingredients individually.

Season to taste and then shape them with 2 tablespoons so that you have an oval shape and drop them into hot oil, frying them until they are golden and crispy.

Make sure the oil is not too hot because you want a golden, not a dark brown colour.

Serve warm or cold.
