Namibian dinner

 
Known for it's deserts and prestine coastline, Namibian cuisine is filled with game, seafood, fresh fruit and of course, beer. Much like ours!
 

Stuffed sourdough loaf

Ingredients

 
  • 1
    sourdough loaf
  • 6
    slices of ham, cut into strips
  • 6
    slices of Italian salami, cut into strips
  • 6
    slices of pastrami, cut into strips
  • 50
    g
    pitted olives, halved
  • 30
    g
    capers, roughly chopped
  • 30
    g
    gherkins, diced
  • 20
    g
    chopped parsley
  • 15
    g
    chopped chives
  • 150
    g
    cream cheese
  • 2
    ml
    black pepper to taste
Servings: Change Serving
 
 

Method

 
Remove both ends of the loaf and hollow it out, leaving a crust about 1,5 cm thick all round.
Place the remaining ingredients in a mixing bowl and mix well.
Spoon the filling into the hollowed-out loaf. Wrap tightly in clingfilm and chill.
To serve, unwrap the loaf, slice and arrange on a serving platter.
Serve with a spoonful of red onion marmalade.
