Cheesy bean and sweet-corn nachos

There is nothing better than nachos covered in melted cheese and slathered in spicy salsa.

Ingredients (8)

20.00 ml fresh chillies — 573
1.00 onion — chopped
1.00 fresh chillies — finely chopped
1.00 butter beans — tinned, drained
1.00 sweetcorn — tinned, drained
2.00 tomatoes — chopped
400.00 g nachos
200.00 g mozzarella cheese — grated

Method:

1. Heat the olive oil in a large frying pan and fry the onion until soft. Add the chilli and fry for a further minute. Stir in the beans and the sweet corn and fry over medium heat for about 5 minutes. Stir in the tomatoes and cook for a further two minutes.
2. Cover the base of a large baking tray with the nachos. Top with the bean mixture and a layer of mozzarella.
3. Melt the cheese under a hot grill.

Serve with guacamole and salsa.
