Ingredients (6)

900.00 gammon — smoked
5.00 ml black peppercorns
1.00 onion — quartered
1.00 carrots — halved
30.00 ml maple syrup
30.00 ml wholegrain mustard

Method:

Place the gammon in a large saucepan with peppercorns, onion and carrot.
Cover with cold water and bring to the boil.
Reduce the heat and allow to simmer for 40 minutes.
Leave to cool in the cooking water.
Carefully peel away the fatty skin and discard.
Use a sharp knife to mark a criss-cross pattern across the fat.
Place the gammon in a roasting pan.
Wrap aluminium foil around meaty sides, leaving the fat exposed.
Mix the syrup and mustard together and spread onto the exposed fat.
Bake in an oven, preheated to 200°C, for 15 minutes until rich brown in colour.
