Ingredients

    ground almonds
  • 200
    g
    soft butter, cubed
  • 4
    large eggs
  • 60
    ml
    brandy
  • cream or mascarpone cheese, to serve
  • 200
    g
    dark chocolate, melted
  • 150
    g
    cake flour, sifted
  • 275
    g
    castor sugar

Method

 
Beat the butter and castor sugar until light. Add the eggs, one by one, beating well after each addition. Stir in the sifted flour and ground almonds, then stir in the melted chocolate and brandy. Mix well. Spoon into a lined and greased 22 cm round cake tin. Bake in a preheated 160 ºC oven for about 1 1/4 hours until firm to the touch. Remove from the oven and allow to stand for 10 minutes before turning out onto a wire rack to cool. Cut into wedges and serve with mascarpone cheese or cream.
