Ingredients (11)

Mushroom filling:
500.00 g mushrooms — sliced
2.00 garlic — cloves, crushed
125.00 ml wine — red
5.00 ml fresh thyme — finely chopped
5.00 ml fresh rosemary — finely chopped
30.00 ml fresh parsley — finely chopped
Leek filling:
700.00 g leeks — rinsed, sliced into rings
5.00 ml fresh thyme — finely chopped
50.00 ml fresh parsley — finely chopped
sea salt and freshly ground black pepper
pancakes — to serve

Method:

Mushroom filling:
Fry the mushrooms and garlic in the oil until translucent.
Add the red wine and bring quickly to boil.
Add the remaining ingredients and simmer until most of the liquid has evaporated.

Leek filling:
Sauté the leeks in a little oil until soft.
Add the remaining ingredients and combine.

Fill homemade or readymade pancakes with mixture and add wedges of cheese.
