Banana fish fillets

Ingredients

4 thick yellowtail or Cape salmon fillets, boned and skinned
1 cup vegetable stock
2 tbsp light soya sauce or sweet soya sauce
2 red chillies, deseeded and finely sliced
juice and peel of 1 lime or small lemon
1 red pepper, sliced very thinly
4-6 bananas, sliced lengthways

Method

Preheat oven to 200 °C.
Place fillets in a baking dish.
Mix stock, soya sauce, chillies and spring onions together and pour over fish.
Toss in bananas and bake for 15-20 minutes, uncovered.
Serve with brown and wild rice tossed with spring onions, lemon peel and avocado.
