0.00 yellowtail — or Cape salmon fillets, boned and skinned
0.00 stock — vegetable
0.00 soy sauce — light or sweet
0.00 red chilli — deseeded and finely sliced
0.00 lime — zest and juice
0.00 red pepper — thinly sliced
0.00 bananas — sliced lengthways

Method:

Preheat oven to 200 &degC.
Place fillets in a baking dish.
Mix stock, soya sauce, chillies and spring onions together and pour over fish.
Toss in bananas and bake for 15-20 minutes, uncovered.
Serve with brown and wild rice tossed with spring onions, lemon peel and avocado.
