Grilled sardines with red onion

With beautiful beetroot tzatziki.

  • A bunch of fresh mixed herbs
  • Sea salt
  • Red onions
  • Beetroot tzatziki:
  • 2
    cooked beets - grated
  • 1
    Greek yoghurt
  • 3
    garlic cloves - crushed
  • Freshly ground black pepper
Servings: Change Serving


Stuff the sardines with mixed herbs (fennel and parsley make a great combination). Sprinkle with sea salt. Grill on medium hot coals for 3 minutes a side. Serve at least 2 sardines per person with tzatziki, red onion rings and a fresh garden salad.

Beetroot tzatziki:

Stir all of the ingredients together and flavour with pepper.

Substitute the beets with grated cucumber for a more traditional flavour.

Grate the cucumber, sprinkle with a little salt and put in a sieve. Rest for a while to get rid of most of the water. Rinse, dry with a paper towel and mix with the yoghurt.
