Allspice
Small brown berry; flavour resembles blend of cinnamon, cloves and nutmeg. The dried berries are dark brown and can be purchased whole or ground.

Use: Sausages and braised meats, poached fish, stewed fruits, pies, puddings, stews. Whole berries are used in pickles or preserves. Crushed, they flavour cakes, biscuits and some meat dishes.
