Zest
The outer rind of citrus (lemons, oranges, limes and grapefruit) fruit containing essential oils that has a distinctive flavour; remove it carefully using a grater, a potato peeler or a zester, depending on the intended use.

Use: Take care not to remove any pith with the zest, as it can be very bitter. The zest of fruits can be used in desserts, savoury dishes, cakes, soups, stuffings and puddings.
